It depends on the RPM...

You can search the archives here for 'quadrature' and if you look back
far enough you will see where someone found that 4 kHz was about the
limit when there were no other objects to evaluate. But, you have at
least 2 objects so the 4 kHz number will be somewhat reduced. Maybe 2
kHz each.

You can use a PAK VII to do the counting but it might be considered
'awkward' http://www.awce.com/pak7.htm

In another forum we were discussing the idea of using a CPLD to do the
counting and interfacing with the CPU over SPI. Not too difficult...
